Food processors have been forced to deal with prices for\ningredients going up by 10%, 20%, 60% and even over 100% with little\nto no warning. They are also being squeezed by retailers pushing\nback on processors to maintain or even reduce costs. In most cases\nthe raw material increases are due to one off or systemic events like\nreduced crop yields due to poor growing seasons, transport costs due\nto rising fuel costs and transportation pathway disturbances. Some of\nthese issues can be traced back to Covid disruptions, some to\nirregular weather patterns and some to very unexpected and\ndevastating wars.<\/p>\n\n<p>Consumers are starting to feel the pinch as they are squeezed\nbetween substantially higher food prices and residential prices and\nsome of the highest interest rates in 20 years. Canadian consumers\nare struggling to maintain their ability to secure and consume good\ntasting and nutritious food products.<\/p>\n\n<p>At Hela Spice, we started looking at these issues a couple of years\nago. We have used our global reach to secure great ingredients at the\nmost competitive prices available. Our pricing is as current as we can\nmake it. We also wanted to take a fresh look at all our food products,\nwith a special focus on meat products, to look at ways of creating less\nexpensive, but great tasting, healthy and convenient food products\nthat offer marketable benefits for consumers.<\/p>\n\n\n\n\n\n\n\n<p><img decoding=\"async\" class=\"in-img\" src=\"https:\/\/www.helaspice.ca\/na\/wp-content\/uploads\/2024\/07\/arrow.jpg\" alt=\"arrow\" \/><\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-0e051c4 elementor-widget elementor-widget-heading\" data-id=\"0e051c4\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"heading.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t<h2 class=\"elementor-heading-title elementor-size-large\">SNACK FOODS<\/h2>\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-ee18afd list-on-content elementor-widget elementor-widget-text-editor\" data-id=\"ee18afd\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<p>Snack foods have been experiencing sustained demand growth over the last few\nyears and they show no indication of slowing down. Due to the same ingredient\nprice pressures that other food categories are experiencing, Snack Foods are\nfeeling the pinch and are adapting by reducing portion sizes, looking for ways to\neconomize on the recipe, streamlining offerings and even to the point of stopping\nproduction of some brands. The creative people in the Hela Spice R&#038;D team went\nback to find ways to not only provide cost effective meat-based snack foods, but\nalso a way to value add upcycled or innovative food ingredients to create new and\ninnovative snack foods that add great value for both the consumers and the\nprocessors.<\/p>\n\n\n<p style=\"color: #da020f;\">Shelf Stable Hot Dog, Pepperoni and Salami Bites<\/p>\n<ul>\n\t<li>Rather than using broken hot dogs, slicing ends or miscuts as low value rework\nor sold off as seconds at low value, we have developed seasoned, fully dried and\nshelf stable bites perfect as a supplement to pepperettes or jerkie. <\/li>\n<\/ul>\n<p style=\"color: #da020f;\">Protein Chips<\/p>\n<ul>\n\t<li>A wonderful way to use lower value meat trim or innovative vegetable proteins\nand combining them with delicious ingredients like wheat, rice and potato flour,\nalong with starches, to create healthy and high value snack foods. We can also\nadd upcycled vegetable ingredients to add great flavours and differences that\nalso offer CO2 reduction benefits.<\/li>\n<\/ul>\n<p style=\"color: #da020f;\">Extruded Snacks or Nut Mixes<\/p>\n<ul>\n\t<li>Hela Spice has spent a lot of time looking at innovative new ingredients for the\nplant-based market. What we have found is that there are some that offer\nsubstantial benefits for a company looking for a healthy, nutritious high protein\nsnack food. For example, we have an organic extruded soy flour based crisp,\nthat just needs a flavoured coating to be a delightful snack offering. This historically often been a good choice, but since\nthe inflationary period, hot dogs and sausages have risen dramatically in\ncost as well. So how do you reduce the cost of these lower cost staples? The\nHela Spice team stepped back and looked at it in a completely new way. We\nhave looked at the replacement of a portion of the meat block with readily\navailable bean, grain and pea flours to imagine a line of healthy, great\ntasting meat products that combine the meat and vegetable proteins to\ncreate lower cost meat products. All the nutrition and taste, but lower in\ncost with healthier eating.<\/p>\n<p>It has taken a lot of hard work, innovative ingredient application and\ntesting, testing and even more testing, but we have developed functional\ncombinations that are almost indistinguishable to a traditional meat-based\nproduct and offer a great eating experience and excellent nutritional\nbenefits.<\/p>\n\n<p style=\"color: #da020f;\">Chicken, Pork and Chickpea Flour Hot Dog\n<\/p>\n<ul>\n\t<li>Blend of finely textured pork and chicken, combined with an extremely\nfunctional chickpea flour and other ingredients <\/li>\n<\/ul>\n<p style=\"color: #da020f;\">Pork and Textured Pea and Red Lentil Breakfast Sausage<\/p>\n<ul>\n\t<li>All the taste, texture and flavour, lower in cost and healthier with\nincluded fibre and vegetable protein<\/li>\n<\/ul>\n<p style=\"color: #da020f;\">Pork, Sweet Potato Flour and Textured Fava Bean Cheddar Smokie<\/p>\n<ul>\n\t<li>With expected texture, flavour and colour, all wrapped up in a lower\ncost, great tasting and nutritious product <\/li>\n<\/ul>\n&nbsp;\n<p>\u2026 and these products are easy to produce!<\/p>\n\n<p><img decoding=\"async\" class=\"in-img\" src=\"https:\/\/www.helaspice.ca\/na\/wp-content\/uploads\/2024\/07\/burger.jpg\" alt=\"sauce\" \/><\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-c3b6d20 elementor-widget elementor-widget-heading\" data-id=\"c3b6d20\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"heading.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t<h2 class=\"elementor-heading-title elementor-size-large\">LUNCHEON MEATS<\/h2>\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-c39cd3a list-on-content elementor-widget elementor-widget-text-editor\" data-id=\"c39cd3a\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<p>Hela Spice knows luncheon and deli meats! We also know ways to reduce\ncosts to produce them and still offer great tasting, healthy and economical\nproducts, by just looking at them a bit differently. We can break this up into\ntwo ways. \n<\/p>\n\n<p>The first way is to examine the processes and ingredients used to produce\nthe existing products and look for options that can reduce the costs, but still\noffer a traditional product. Our experiences over the last few years with\nnovel functional ingredients has provided our R&#038;D team with a great set of\ntools at their disposal.<\/p>\n\n<p>The second way is getting creative in a way similar to what we just\ndiscussed with hot dogs. Each product may require a different\napproach, but we have already produced sample products that meet these\ntargets.<\/p>\n\n<p style=\"color: #da020f;\">Bright and Flavourful Fermented and Dried Meats<\/p>\n\n<ul>\n\t<li>A delicious pepperette made with sweet potato flour<\/li>\n\t<li>A fully dried and fermented pepperoni, ready for pizza, extended with\ntapioca flour and chickpea flour<\/li>\n\t<li>How about a spicy chipotle Jerky, made with beef, lentils and oat fibre?\n<\/li>\n<\/ul>\n<p style=\"color: #da020f;\">Delicious Cooked Meats<\/p>\n<ul>\n\t<li>Reduced cost sliced chicken or turkey with only wheat flour and textural\nwheat proteins<\/li>\n\t<li>Baked turkey loaf with a large percentage of a functional chickpea flour<\/li>\n\t<li>Sliced bologna extended with pork proteins and lentil flour<\/li>\n<\/ul>\n&nbsp; \n<p>\u2026 and many more exciting concepts available.<\/p>\n<p><img decoding=\"async\" class=\"in-img\" src=\"https:\/\/www.helaspice.ca\/na\/wp-content\/uploads\/2024\/07\/slice.jpg\" alt=\"burger\" \/><\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-61c9176 elementor-widget elementor-widget-heading\" data-id=\"61c9176\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"heading.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t<h2 class=\"elementor-heading-title elementor-size-large\">BAKED OR BREADED MEATS\n<\/h2>\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-a70c056 list-on-content elementor-widget elementor-widget-text-editor\" data-id=\"a70c056\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<p>One area where we can use some knowledge that we have uncovered over the last few years, is in the baked and breaded meat product categories. Just like with luncheon meats, we can break this up into two ways.<\/p>\n<p>The easiest and fastest to market would be in producing meat products that extend proteins with the addition of new and lower cost proteins like soy, wheat, chickpea and lentils. In addition, we can look at the batter and breading systems to replace the traditional ways of doing things and use a system that is substantially lower in cost and used by some of the most popular chicken nuggets in the world.<\/p>\n<p>The second way is get creative in a way similar to what we just discussed. This is to look at replacing the present methods of creating a product, with some of the new, lower cost and functional flours. With strong nutritional and lower cost, vegetable protein flours offer great functionality with savings and organic as well. Each product may require a different approach, but we have already produced sample products that meet these targets.<\/p>\n<p style=\"color: #da020f;\">Extended Minced Products \u2013 Meat and Vegetable Protein Combination<\/p>\n<ul>\n\t<li>A delicious pork breakfast patty, lower in fat, high in protein<\/li>\n\t<li>Formed chicken strips, straight batter system, but with the addition of wheat starch and textured wheat to eliminate an allergen<\/li>\n\t<li>How about a flavourful beef patty with organic soy flour and textured soy?<\/li>\n<\/ul>\n<p style=\"color: #da020f;\">Delicious Breaded and Baked Meats<\/p>\n<ul>\n\t<li>Reduced cost chicken nuggets made with only wheat flour and textural wheat proteins<\/li>\n\t<li>Baked Beef Meat Loaf using only soy flours and textured soy flour<\/li>\n<\/ul>\n<p><img decoding=\"async\" class=\"in-img\" src=\"https:\/\/www.helaspice.ca\/na\/wp-content\/uploads\/2024\/07\/sosage.jpg\" alt=\"slice\" \/><\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-f54da95 elementor-widget elementor-widget-heading\" data-id=\"f54da95\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"heading.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t<h2 class=\"elementor-heading-title elementor-size-large\">WHOLE MUSCLE?<\/h2>\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-ce7d04a list-on-content elementor-widget elementor-widget-text-editor\" data-id=\"ce7d04a\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<p>Whole Muscle based products are the most difficult products to\nachieve a substantial cost reduction in, but still provide the eating\nexperience that consumers are looking for. We can look at this in a\nfew ways. The first way is to look at the types of standard ingredients\nused in whole muscle products and explore the innovative and lower\ncost new cures, yield enhancers, flavours, spice applications and nets\nor casings. Our R&#038;D team are fully up to date on the latest\ntechnologies the meat industry has to offer.<\/p>\n<p>The second area is to look at innovative processing techniques,\ncombined with emerging technologies. Our R&#038;D team has many years\nof experience in processing using a wide range of techniques and\nthey would be glad to discuss your products and fine tune the process\nto get the yields and texture you are trying to achieve. As well, we are\nworking with emerging technologies like spice coated sheets to\nreduce waste, improved functional ingredients and a range of new\nprocessing ideas and equipment.<\/p>\n<p>Finally, we are pushing the boundaries of whole muscle products into\nthe blended meat and vegetable protein category. Where costly meat\nis replaced by lower cost vegetable proteins and flours that are\nadded to either a macerated whole muscle or injected into the meat\nitself along with great flavours.
